Necessary materials:

  • Cute birthday cake

Rice: 3 cups
Cherries: 500 grams (fresh or dried)
Sugar: 1 to 1.5 cups (depending on taste)
Chicken or minced meat: 300 grams
Onion: 1 large
Brewed saffron: as much as needed
Oil or butter: as much as needed
Salt and pepper: as needed
Pistachio and almond slices for decoration (optional)

Cherry Pilau

How to prepare cherry pilo:

Wash the cherries and remove their cores.
Mix the pitted cherries with the sugar in a saucepan and let them rest for about an hour to drain.
Then put the pot on a low heat until the cherries cook and the sugar turns into a syrup. After about 15-20 minutes, remove the syrup and cherries from the heat and let them cool.

Wash the rice and leave it with the right amount of water and salt to soak for about half an hour.
Then boil the rice in a pot with a lot of water and when it is half cooked, drain it.

Finely chop the onion and fry in some oil until golden.
Add the meat to the onion and fry until it changes color.
Add salt and pepper to the meat and let it cook.

Put a little oil or butter in a pot.
Put a layer of half-cooked rice in the pot.
Spread some of the cherries on the rice and add some of the cherry syrup.
Pour some of the cooked meat over the cherries.
Repeat these layers until you run out of material. The last layer should be rice.
Pour some brewed saffron on the rice.
Put the pot on low heat and let the rice infuse.

After brewing, pour the cherry pilu into a serving dish and decorate it with pistachio and almond slices.
