How to prepare mango tiramisu:
Separate the eggs and beat the yolks with half of the sugar and vanilla until creamy and pale.
Add the mascarpone cheese to the egg yolks and mix well until smooth.
Beat the egg whites with the remaining sugar until it forms.
Add the beaten whites to the mixture of yolks and mascarpone and stir slowly.
Add the whipped cream slowly to the mixture.
Peel the mangoes and cut them into small pieces. Set aside some chopped mangoes for the final garnish.
